Jaan is a Michelin-starred upmarket French restaurant, but it's also the top spot to linger on an evening. Opened in 2002, the restaurant has views that should be Michelin-starred. On the Fairmont hotel upper level, it boasts stunning views of the Alps, the lake and the hotel's broad gardens. The food and an exhaustive wine list are wonderful, of course, but plan on long after-dinner coffee. Closed the first three weeks of January and August.

This Michelin-starred restaurant is in a magnificent hotel, set amid a carefully tended garden overlooking the lake and the Alps. Even if the food wasn't award-winning, anything in these surroundings is worth your while. Best time to go: the first Thursday of the month for meals based on the wine and region of that month.

There's an old travelers' adage: if you can't see the cow grazing in the pasture outside, don't buy steak in the restaurant inside. True to this idea, Bel Horizon gets fish from Lake Geneva, meters away, and serves it fresh. It is worth waiting for an outside table; like many other Montreux restaurants, this one lives up to its name of "nice view."
